Set up the patio table, turn on the music and pull up a chair. It's Friday! The last place I want to be is in the kitchen on a hot summer day. Since I still need to cook and I'm not a grill master, I've got to be creative indoors.
Think stove top casseroles this summer. Our appetites change from comfort food to light and simple dishes, and I have that nice mix of both with my Spinach and Tuna Casserole. This is a one pot wonder that won't break the bank. Spinach, sauteed Onions and Light Tuna, with a creamed soup equal a flavor combination worthy of a blog post.

Turn that oven off and stay cool this season with the concept of stove top casseroles. The sweat is on the diced onion and the rest of the prep work is quick and easy. One pot and you're ready to serve. There's really is no need to turn on the oven. A low heat on the stove top combines the ingredients. This is a flip flop and tank top day, so you know it had to be simple.
